I love good food. I love to cook. And I love healthy food that I can feel good about serving my family. Unfortunately, I don’t have a lot of time to cook. So, finding good, quick recipes for healthy and filling meals is important to me. I recently tried this recipe out on the family and it was an immediate hit!
- 2 Tbs olive oil
- 1 ½ – 2 lbs boneless, skinless chicken thighs*
- 1 green bell pepper, diced
- 1/3 onion, diced
- 1 C sliced mushrooms
- 1 jar marinara sauce
- 1 tsp crushed garlic
- ½ tsp oregano
- ½ tsp basil
- ½ Cup light Ricotta
- 4 cups cooked whole wheat penne
- Salt and pepper to taste
Add olive oil to a large skillet. Dust chicken breasts with salt and pepper and sauté in skillet together with green pepper and onion until chicken is cooked through and no pink remains—about 5 minutes per side. Add mushrooms to the skillet when the chicken is about half done (they don’t take long to cook). When vegetables and chicken are cooked, stir in marinara and seasonings. Simmer together for 10 minutes over medium heat. Stir in ricotta and continue simmering for 5 minutes more. Serve over whole wheat pasta. (Serves 4)
